Γιουβαρλάκια | Chickpea ball soup (yuvarlak kofte soup)



Μέχρι προχθές δεν είχα φτιάξει ποτέ μου γιουβαρλάκια. Η όψη του πιάτου αυτού μου είναι οικεία από την παιδική μου ηλικία αλλά ποτέ δεν είχα ασχοληθεί περαιτέρω. Η έμπνευση για να φτιάξω αυτό το πιάτο, καθώς και η συνταγή, την οποία ακολούθησα με μικρές παραλλαγές, ανήκουν στην Δάφνη, αυτήν την κινητή εγκυκλοπαίδεια μαγειρικής, την οποία ευχαριστώ θερμά (και αν ήσασταν εδώ όταν το φαγητό ήταν έτοιμο θα καταλαβαίνατε ότι δεν είμαι η μόνη). Το φαγητό αυτό είναι εκπληκτικό σε όρους υφής, αρώματος, και γεύσης.
This is a traditional dish, which is found in Greece, Turkey, and Cyprus. In this vegan variation, the minced meat is replaced with minced soaked chickpeas, and the egg-lemon sauce with tahini-lemon sauce. This vegan version is an amazing dish, in terms of texture, smell, and taste. The balls are best enjoyed when cut in halves and then each half is rolled out into the thick soup. Υλικά

Για τα γιουβαρλάκια:
1,5 κούπα ξερά ρεβύθια (ή περ. 300 γρ μουλιασμένα ρεβύθια)
μισή κούπα ρύζι γλασσέ πλήρες (αναποφλοίωτο), ή όποιο άλλο πλήρες ρύζι βράζει σε περίπου 20 λεπτά
μισή κούπα άνηθο ψιλοκομμένο
μισή κούπα μαιντανό ψιλοκομμένο
2 κσ τριμμένος λιναρόσπορος
1/3 κούπας μικρές νιφάδες βρώμης
αλεύρι ρυζιού, ιδανικά από πλήρες ρύζι (αν και όσο χρειαστεί)
ένα μεγάλο κρεμμύδι
1/4 κγ αλάτι
1/8 κγ λευκό πιπέρι

Για τη σούπα:
μια μεγάλη πατάτα
1-2 καρότα

Για το ταχινολέμονο:
2 κουταλιές ταχίνι
Νερό
Χυμό από δύο λεμόνια
Ζουμί από τη σούπα

Προεργασία (το βράδυ πριν μαγειρέψουμε)

Σκεπάζουμε τα ρεβύθια με νερό και τα μουλιάζουμε όλο τα βράδυ (10-12 ώρες).
Σε ένα άλλο δοχείο, σκεπάζουμε το ρύζι με νερό και το αφήνουμε και αυτό να μουλιάσει το ίδιο διάστημα.

Μιάμιση ώρα πριν φάμε

Ψιλοκόβουμε τον λιναρόσπορο στο στεγνό μπλέντερ/μούλτι και τον βάζουμε σε μία μεγάλη λεκάνη.
Ψιλοκόβουμε τα μουσκεμένα ρεβύθια στο μπλέντερ/μούλτι και τα προσθέτουμε στη λεκάνη
Ψιλοκόβουμε το κρεμμύδι στο μπλέντερ/μούλτι και το προσθέτουμε στη λεκάνη (μαζί με το ζουμί του).
Ψιλοκόβουμε τον άνηθο και τον μαιντανό και τα προσθέτουμε στη λεκάνη
Προσθέτουμε όλα τα υπόλοιπα υλικά (εκτός του αλεύρου ρυζιού) στη λεκάνη και ανακατεύουμε το μείγμα. Αν το μείγμα είναι στεγνό, προσθέτουμε 2-4 κσ νερό για να γίνει κάπως (ελάχιστα) υγρό.
Ανακατεύουμε το μείγμα λίγο ακόμα, και δοκιμάζουμε αν πλάθεται. Αν δεν πλάθεται, προσθέτουμε ρυζάλευρο μέχρι να μπορεί να πλαστεί σε αρκετά σταθερά μπαλάκια. Η διάμετρος να είναι περίπου 2-2,5 εκατοστά.

Για την σούπα, βάζουμε σε μια μεγάλη κατσαρόλα 2 λίτρα νερό και την βάζουμε να ζεσταθεί. Εν τω μεταξύ, ψιλοκόβουμε την πατάτα και το καρότο σε μικρά κυβάκια (πλευράς < 1 εκ) και τα προσθέτουμε στην κατσαρόλα. Μέχρι η σούπα να πάρει την πρώτη της βράση πλάθουμε το μείγμα σε μπαλάκια περίπου 2-2,5 εκατοστών και τα τοποθετούμε σε ένα πιάτο. Μόλις η σούπα αρχίσει να βράζει, χαμηλώνουμε την φωτιά (π.χ. στο 6/9) και τοποθετούμε προσεκτικά τα μπαλάκια μέσα στην κατσαρόλα. Όταν τα τοποθετήσουμε όλα μειώνουμε την ένταση της εστίας περισσότερο (π.χ. στο 4/9) ώστε τα γιουβαρλάκια να βράσουν ήρεμα χωρίς να διαλυθούν. Μαγειρεύουμε για 40 λεπτά με σκεπασμένο καπάκι. Αν εξατμιστεί πολύ νερό και το φαγητό δεν θυμίζει σούπα, προσθέτουμε λίγο ζεστό νερό.

Προς το τέλος ετοιμάζουμε τον χυμό των λεμονιών. Μετά διαλύουμε 2 κσ ταχίνι σε λίγο νερό, ανακατεύοντας με ένα σύρμα μέχρι το μείγμα να ασπρίσει. Συνεχίζουμε το ανακάτεμα προσθέτοντας το χυμό των λεμονιών, και μετά ζουμί από τη σούπα, όσο μπορούμε να πάρουμε χωρίς να χαλάσουμε τα γιουβαρλάκια. Ρίχνουμε το ταχινολέμονο στην κατσαρόλα, και την γυρνάμε κυκλικά για να πάει παντού. Αν θέλουμε να εξουδετερώσουμε λίγο τη γεύση του λεμονιού, αυξάνουμε την θερμότητα στο τέρμα και μόλις πάει να πάρει μία βράση σβήνουμε την εστία.

Σερβίρουμε σε βαθιά πιάτα και τρώμε με ζεστό σπιτικό ψωμί.

Αν δεν είσαι vegan, γίνε vegan. Η ολική χορτοφαγία (veganism) είναι μη-βία. Κυρίως είναι μη-βία προς άλλα αισθανόμενα όντα. Αλλά είναι και μη-βία προς τη γη και μη-βία προς τον εαυτό σου.

Και ποτέ, μα ποτέ, μην πεισθείς από την παράλογη ιδέα ότι πρέπει να προωθήσουμε την "χαρούμενη εκμετάλλευση" των ζώων ώστε οι άνθρωποι να γίνουν vegan. Ολόκληρη η βιομηχανία της "χαρούμενης εκμετάλλευσης" έχει μόνο έναν στόχο: να κάνει τους ανθρώπους να νιώσουν άνετα με την εκμετάλλευση των ζώων και να την συνεχίσουν.

Η ολική χορτοφαγία είναι ΔΙΚΗ ΜΑΣ επιλογή. Έχουμε την ικανότητα να πούμε όχι στη βία. Έχουμε την ικανότητα να αναγνωρίσουμε τα ζώα ως πρόσωπα/άτομα. Έχουμε την ικανότητα να αρνηθούμε τα ζώα ως ιδιοκτησία. Έχουμε την ικανότητα να πούμε όχι στο σπισισμό. Έχουμε την ικανότητα να λύσουμε το πρόβλημα της εκμετάλλευσης των ζώων με τον μοναδικό τρόπο που υπάρχει: καταργώντας τη ζήτηση για ζωικά προϊόντα.

RECIPE IN ENGLISH 

Ingredients

For the chickpea balls:
1.5 C dry chickpeas (or ~300g soaked chickpeas)
0.5 C whole rice (the soup variety, or a variety that can be cooked in about 20 mins
0.5 C minced dill weed
0.5 C minced parsley
2 T ground flax seed
1/3 C small oat flakes
rice flour, ideally from whole rice (in case it is needed)
1 big onion
1/4 t salt
1/8 t white ground pepper

For the soup:
2 lt water
a big potato
1-2 carrots

For the tahini-lemon sauce:
2 T tahini
water
juice from two lemons
plus a bit of the cooked soup 

What to do the night before

Cover the chickpeas with water and let soak throughout the night (10-12 hrs).
In a separate bowl, cover the rice in water and let soak for the same period.
Rinse and drain in the morning.

90 mins before lunch

Grind the flax seeds in a dry blender/processor and pour in a large mixing bowl.
Pulse the soaked chickpeas in the blender/processor and add to the mixing bowl. Add the soaked and drained rice.
Chop the onion in the blender/processor and add to the mixing bowl along with any onion juice.
Finely chop the dill and parsley and add to the mixture.
Add the rest of the ball ingredients (except rice flour) into the mixing bowl and combine. If the mixture seems dry, add 2-4 T of water to achieve a rather wet consistency.
Using your hands, work the mixture around a bit more to homogenise and try to make a ball. If the ball is wet and does not feel rather stiff, add as much rice flour as needed. Roll out into little balls (the diameter should be no more than an inch).

For the soup use a really large soup pot. Bring to the boil 2 lt of water - while the water is heated, dice the potatoes and carrot and add to the water. Until the soup reaches a boil we roll out the balls and line them carefully on a plate. When the soup reaches a boil, we reduce the heat to medium (e.g. 6/9) and use a slotted spoon to carefully transfer the balls in the soup pot. When the soup comes to a boil we reduce the heat to a slow simmer (e.g. 4/9) so that the balls retain their shape during cooking, and we let the soup cook, covered, for 40 minutes. We should check the level of the liquid from time to time. If enough liquid evaporated, we can add some warm/hot water.

Towards the end of cooking we start preparing the sauce. First we juice the two lemons. Then we whisk 2 T of tahini with some water until the mixture turns whitish. We continue whisking and add add the lemon juice. Then we add some of the soup (as much as we can take from the pot without spoiling the balls) and whisk some more. We put the finished tahini-lemon sauce to the soup pot, swirling the pot around so that the sauce is evenly distributed and turn the heat off. If we like the lemony tang in our soup, the soup is ready. If we want to neutralise the lemony tang, we increase the heat to maximum, and just when the soup comes to a boil we turn off the heat.

We serve in large soup bowls with warm homemade bread.

If you are not vegan, please go vegan. Veganism is about nonviolence. First and foremost, it’s about nonviolence to other sentient beings. But it’s also about nonviolence to the earth and nonviolence to yourself.

And never, ever buy into the nonsensical notion that we need to promote “happy exploitation” in order to get people to go vegan. It’s the opposite: the entire “happy exploitation” industry has one goal: to make the public more comfortable about animal exploitation.

Veganism is OUR choice. We have the ability to say no to violence. We have the ability to affirm the personhood of animals. We have the ability to reject the status of animals as property. We have the ability to say no to speciesism. We have the ability to solve the problem of animal exploitation in the only way it can be solved: by abolishing the demand for animal products.

    1. Σε ευχαριστώ πολύ Μαρίνα. Κι εγώ θεωρώ πώς το να είναι δίγλωσσο είναι καλή ιδέα, αλλά ο χρόνος είναι (όπως για όλους) σε στενότητα, ειδικά όταν έχεις παιδιά!
