Ξεροψημένες πατάτες φούρνου με δενδρολίβανο και θυμάρι | Oven roasted potatoes with rosemary and thyme

Την συνταγή αυτή την κάνω συχνά (είναι παραλλαγή της συνταγής Herb-roasted potatoes από το βιβλίο Vegan with a Vengeance) αλλά ποτέ δεν σκέφτηκα να την μοιραστώ - ίσως επειδή είναι από αυτές τις συνταγές που την κάνεις "με το μάτι". Όμως άρεσε πολύ στη φίλη μου τη Δήμητρα, η οποία της έδωσε πολλά αστεράκια! Αν λοιπόν σας αρέσει η συνταγή, τις ευχαριστίες σας στη Δήμητρα!

Επίσης, με τη συνταγή αυτή μπορούμε να εξοικειωθούμε με τη χρήση της φλούδας από τις πατάτες. Μία μόνο φλούδα (58g) περιέχει 4,1mg σιδήρου (δηλ. 23%) της ημερήσιας πρόσληψης σιδήρου. Είναι κρίμα να την πετάξουμε, δεδομένου του ότι είναι νοστιμότατη και τραγανή! 

Υλικά (για ένα ταψί)
πατάτες (περίπου 1 κιλό - δηλ. 3 μεγάλες, 5 μέτριες, ή 7 μικρές)
κρεμμύδι, 1 μέτριο
θυμάρι αποξηραμένο, 2 κτ
δενδρολίβανο τριμμένο, 2 κτ
ελαιόλαδο, 4 κσ
αλάτι, 1 κτ
πιπέρι, 1/8 κτ

Εκτέλεση

  • Προθερμαίνουμε τον φούρνο στους 220C. 
  • Ξεπλένουμε τις πατάτες (δεν ξεφλουδίζουμε) με τρεχούμενο νερό ώστε να φύγουν τα πολλά χώματα. Τις κόβουμε σε κομματάκια μεγέθους μπουκιάς και τις απλώνουμε σε ένα ταψί. Ξεφλουδίζουμε το κρεμμύδι, το κόβουμε στη μέση (κόβοντας από πόλο έως πόλο), μετά κάθε ημισφαίριο στα 4 (πάλι πόλο έως πόλο), διαχωρίζουμε τις φέτες, και το προσθέτουμε στο ταψί.
  • Ραντίζουμε με το ελαιόλαδο, και ανακατεύουμε με τα χέρια μας ή με μια ξύλινη κουτάλα.
  • Ψήνουμε για περίπου 25 λεπτά (μέχρι να ροδίσουν ελαφρώς, αλλά να μην είναι ακόμα πλήρως ροδισμένες). Βγάζουμε το ταψί από το φούρνο, ραντίζουμε τις πατάτες με το δενδρολίβανο, το θυμάρι, το αλάτι, το πιπέρι, και τις ανακατεύουμε με την ξύλινη κουτάλα.
  • Συνεχίζουμε το ψήσιμο για άλλα 20 λεπτά (ή μέχρι να ροδίσουν στο βαθμό που μας αρέσει).

This is an often used recipe (based on the Herb-roasted potatoes from Vegan with a Vengeance). Its simplicity was the reason I did not think of sharing it until now. It is one of those un-recipes, where every ingredient goes "by the eye" and there is no actual measuring of ingredients (un-recipe follows in green, for expository purposes). Recently, a friend, Dimitra, gave this recipe many stars, and convinced me it is worth sharing! So, here it is - I hope you like it, too!

Further, this recipe is ideal to familiarize us with the use of unpeeled potatoes. It is notable that one potato skin (58g) contains 4.1mg of iron (i.e. 23% of the recommended daily amount). There is no reason to waste such a valuable dietary material, especially given that the skin is delicious and ultra crispy! 

Ingredients (for one baking tray)
potatoes (about 1 kg - ie 3 large, 5 medium, or 7 small)
onion, 1 medium
dried thyme, 2 t
dried rosemary, 2 t
olive oil, 4 T
salt, 1 t
pepper, 1/8 t

How to do it
  • Preheat oven at 220C/430F. 
  • Rinse the potatoes with water. Do not peel. Cut into bite-size chunks and place on a baking tray. Peel the onion, and cut in large chunks. Separate the layers of the onions and mix them with the potatoes.
  • Sprinkle with olive oil, and toss with your hands or a wooden spoon.
  • Bake for about 25 mins (until moderately baked). Take the tray out of the oven, sprinkle with the herbs, salt and pepper, and toss around with the wooden spoon.
  • Return to oven and bake for another 20 mins (or until they achieve your desired crispiness and colour).

UN-RECIPE
Preheat oven at 220C/430F. Rinse some potatoes, do not peel, cut them in chunks and place in a baking tray. Add an onion cut in bite sized pieces. Sprinkle some olive oil and bake until you achieve your desired crispiness and colour. In the middle of baking, toss the potatoes around adding rosemary, thyme, salt, and pepper.
